This fresh roasted, specialty grade, organic micro-lot (separated and dedicated to quality) coffee is grown in the beautiful Chiapas Yajalon Tzotzil Cape region. It is such a wonderful coffee experience that you will hum to the tune of Wall of Voodoo's "Mexican Radio."
It is intercropped with citrus fruits, plums, bananas, pumpkin, and beans; it has achieved organic classification based on how it reuses coffee cherry pulp, dry leaves, and wood ash returning to the crops, which not only improves the soil but also helps produce this coffee's amazing flavor. Tasty like a churro, smooth like Pedro (don't forget to vote), with a kick of caffeine to ensure it gets you ready to break out those dance moves for Taco Tuesday Happy Hour!

We chose this coffee not just because it cupped well and the differentiated processing method, and their focus on organic and sustainability but because this provider is also focused on improving the livelihoods of the local coffee-producing communities. This includes implementing risk management controls of:

- Positive Good Agricultural Practices (GAP) education
- Metrics reporting
- Continuous Improvement
- Reforestation of over 2,4000 acres
This has resulted in a harvest yield increase of 60% impacting over 200 farmers. Boon results!
